Yesterday I made a list of some of my favourite things to do in December (if you haven't seen it then you can read that here). One of the things on that list was baking, it's one of the best things to do this time of the year. Filling the cupboards with boxes of tasty home bakes, and the house with a delicious smell.
Chocolate Truffles are such a throw back for me, they've been missing from my Christmas baking list for the last couple of years, but have become a strong contender for one of the tastiest thing I've made yet. Back in the day, we called these Reindeer Nibbles, meaning that they're perfect for Christmas time.
These are tasty treats that you can make any size you like, meaning you can have small snack sizes truffles, or bigger for your pudding. As always with my recipes I share on my blog, it's an easy recipe that takes no time, hardly any ingredients, and this time, next to no cook time! You can also change up the recipe, adding cherries, raisins or coconut to make a variety of truffles to enjoy.
Ingredients
20 digestive biscuits
125g of butter
200g of condensed milk
2 tablespoons of cocoa powder
Method
1. Melt the butter and condensed milk in a pan over a low heat, making sure to not let it boil. Once the butter has melted, take the mixture off the heat and allow to cool.
2. Crush the biscuits in a bowl (or in a bag with a rolling pin) until they are small, like breadcrumbs.
3. Mix the melted butter comb into the bowl with the biscuits, making sure every bit is covered. Stir in two tablespoons of cocoa powder.
(At this point, add any of your extra ingredients)
4. Roll the mixture into balls with your hands. The size of the balls is up to you, whether you'd like small truffles or big ones that last more than a bite.
5. Roll the balls into chocolate sprinkles, or coconut shavings (or what ever tickles your fancy).
6. Leave in the fridge to cool for a couple of hours, in order to allow them to set before tucking into them!
