Foodie Friday | Christmas Biscuits Recipe

I've mentioned it countless times already this month, but baking it one of the best Christmas activities out there. It's taken over my Tuesdays of December, and it's now taking over my Foodie Friday.


It's one of those things where you get out of it what you put in. Of course there are some whizzes in the kitchen, able to create master pieces (have you seen the Great British Bake Off?). But for others with less of the technical ability and artistic flare, some simple home bakes still go down a treat and are something to be proud of. 

This month I've already shared a Mince Pies recipe and a Christmas Cake that's not a Christmas Cake (aka a Chocolate Orange cake). All super easy and extra tasty. So today's recipe I'm bringing to blogmas is a Christmas Biscuit recipe, that you can change up over the Christmas season. You can have them plain, as I made, or add some flavourings for orange or cinnamon cookies. You can also mix and match with the cutters you use. We have a huge assortment of cutters from when we were kids (but of course still use now) so made a variety of Santas, stars, christmas trees, bells and snowmen. (We were able to make such a wide selection as we accidentally made 95 cookies - did you see my insta post?)



This recipe won't make the massive 95 that we somehow ended up with (nothing to do with bad maths) and will make around 10-15, depending the size of cutters. We opt for small cookies, and these turn out more like biscuits (hence the title of the recipe), and are very moreish. 




Ingredients

50g of plain flour
25g of butter or margarine
25g of caster sugar
beaten egg to mix

Method
1. Sift the flour into a bowl and rub in the butter until the mixture resembles breadcrumbs.
2. Stir in the sugar and enough beaten egg (you don't have to use the whole egg) to mix to a firm dough.
3. Turn onto a floured surface and knead until smooth.
4. Roll out thinly and cut into shapes using your favourite cutters.
5. Place on a baking sheet and bake in a pre heated oven, 180'C (350'F),  for 12-15 minutes, until golden.



And from all this, you'll make some quick and easy Christmas cookies that are delicious to snack on throughout the festive period!
